Poultry Brine
- 1/4 cup kosher salt
 - 2 tablespoons sugar (brown or white)
 - 1 quart water
 - 2 tablespoons Rub Recipe
 - 1 bay leaf
 - 1 garlic clove
 
Up the recipe as necessary to completely cover the meat in a big pot or bucket. I usually brine it overnight – 12 hours or so
