This recipe is courtesy of Aretha Frankensteins. I got it off of the food network website.

This recipe has been scaled. SERVES 4 (change servings and units)

Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup whole milk or buttermilk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 1/2 teaspoons sugar
  • 3/4 teaspoon vanilla extract
  • butter, for serving
  • syrup, for serving

Directions

  1. In a medium bowl, combine the flour, cornstarch, baking powder, baking soda and salt; mix well.
  2. Add the milk, vegetable oil, egg, sugar and vanilla and mix well.
  3. Let the batter sit for 30 minutes.
  4. Preheat a waffle iron.
  5. Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily.
  6. Follow the directions on your waffle iron to cook the waffles.
  7. Serve immediately with butter and syrup.

Pork Tenderloin Marinade #2

1 Cup Cranberry Apple Juice
1/2 cup Soy Sauce
1/2 cup Teriyaki sauce
1/2 cup olive oil
1/2 TBSP garlic powder
1/2 TBSP ginger powder
1 pork tenderloin

1. Combine all ingredients and pour over pork tenderloin. Let marinade in the fridge up to 12 hours.
2. Grill or back and enjoy!

Works well on pork chops or venison chops as well. If doing the venison just marinade it longer. I guarantee you can’t even tell that it was venison.

Pork Tenderloin Marinade #1

1 Cup Soy Sauce
1 Cup Italian Dressing
1 Pork Tenderloin

1. Pour ingredients over pork tenderloin in a 9 x 13″ baking pan and let marinade in the refrigerator for about 4 hours.
2. Grill tenderloin until about 130 degrees.
3. While grilling put pan with marinade in oven.
4. When tenderloin is close to being done, pull off grill and let rest for a few minutes. Slice and place in the pan and return to oven
5. Let cook at 325 for about 15 minutes.

Cream Cheese Chicken

This turned out very good. I made a few changes (minor ones).

1. Used a package of chicken quarters instead of chicken breast – would probaby go back to just using the chicken breast.

2. Only used 1 package of ranch overall.

Very easy recipe and can be made in the oven if you want to speed things up – all depends on your schedule!
