Poultry Brine

  • 1/4 cup kosher salt
  • 2 tablespoons sugar (brown or white)
  • 1 quart water
  • 2 tablespoons Rub Recipe
  • 1 bay leaf
  • 1 garlic clove

 

Up the recipe as necessary to completely cover the meat in a big pot or bucket.  I usually brine it overnight – 12 hours or so

BBQ Rub

This rub works great on pork, chicken and seafood or fish:

  • 1/4 cup Paprika
  • 1/8 cup Fresh Ground Black Pepper
  • 2 tablespoons Garlic Powder
  • 2 tablespoons Onion Powder
  • 1 tablespoon Cayenne Pepper (optional)
  • 1 tablespoon Chipotle Pepper (optional)
  • 2 tablespoons Chili powder
  • 1/4 cup Kosher Salt
  • 1/4 cup Brown Sugar

 

Pat the meat dry with paper towels and season the meat generously with the rub.
