Broccoli Tortellini Salad

Ingredients

  • 20 oz bag Cheese Tortellini (fresh or frozen)
  • 3 heads broccoli (1 bag)
  • 1 c. sunflower seeds
  • 1 small red onion chopped
  • 1 c. mayo
  • 1/4 c. sugar
  • 2 t. white wine vinegar

 

Directions:

  1. Mix mayo sugar and vinegar.
  2. Cook tortellini unit it floats add rest of ingredients and dressing, chill overnight.

Cornbread Casserole

Ingredients:

  • 1 (8 ounce) box Jiffy cornbread mix
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can creamed corn (not drained)
  • 1 cup sour cream
  • 1⁄2 cup melted butter

 

Directions:

  1. Mix all ingredients and pour into (greased or sprayed with cooking spray) 8×8″ casserole dish.  Cook uncovered for 55-60 minutes at 350 degrees.

Butternut Squash Side Dish

Ingredients:

  • 6 cups diced butternut squash
  • 2 eggs, beaten
  • 1 tsp. kosher salt
  • 1/2 tsp. pepper
  • 8 tbsp. unsalted butter, melted
  • 3/4 to 1 cup coconut milk
  • 1/2 tsp. ginger
  • 1 tbsp. minced garlic
  • 3 tbsp. chopped fresh sage
  • 1/2 cup crushed Ritz crackers

Directions:

  1. Preheat oven to 400 degrees.  Place squash on sheet pan and roast for 20 minutes.  Cool.
  2. Reduce oven temperature to 350 degrees.  In a large bowl combine squash, eggs, salt, pepper, 6 tbsp. butter, coconut milk, ginger, garlic and sage.  Turn mixture into a greased 13 x 9 pan.  Bake for 35 minutes.
  3. Sprinkle with cracker crumbs, drizzle with remaining butter and bake for an additional 10 minutes or until crackers start to brown.

 

creamy tortelli with bacon

1.5 tsp olive oil
1/2 tsp vinegar
5 slices bacon, cooked and crumbled
2/3 cup shredded parmesan
1/2 cup whipping cream
pepper to taste

Cook tortellini according to pkg directions; drain. Saute garlic in olive oil. Stir in vinegar. Toss with tortellini.

Combine bacon, parmesan, whipping cream, pepper in small bowl. Toss with tortellini. Top w/more parmesan. Serve w/crusty bread and salad!

I double this for my family of six and it’s always gone. Sometimes I triple for leftovers. 😉

super awesome oatmeal chocolate chip cookies

1 1/2 cup packed brown sugar
1 cup butter
1 tsp vanilla
1 egg
2 cups oatmeal
1 1/2 cup flour
1 tsp baking soda
1/2 tsp salt
1 cup choc chips
1 cup nuts if desired

Heat oven to 350. Mix browns ugar, butter, vanilla and egg. Add oats, flour, soda and salt. Stir in choc chips and nuts

Bake 9 to 11 minutes.

These are sooooo good!

chicken gnocchi with cream sauce

ngredients

One 1-pound package potato gnocchi
4 tablespoons butter
1 onion, finely chopped
1 red bell pepper, chopped
12 ounces skinless, boneless chicken breast, cut into thin strips
Salt and pepper
2 tablespoons flour
1 cup half-and-half
1 cup chicken broth
2 scallions, chopped

Directions:

Cook the gnocchi according to package directions; drain.

Meanwhile, in a large skillet, heat 2 tablespoons butter over medium-high heat. Add the onion and bell pepper and cook, stirring often, until softened, about 5 minutes. Add the chicken and cook, stirring occasionally, until just cooked through, about 5 minutes; season with salt and pepper.

In a small saucepan, melt the remaining 2 tablespoons butter over medium heat. Whisk in the flour and cook until toasted, about 3 minutes. Whisk in the half-and-half and chicken broth; bring to a boil. Lower the heat and simmer until thickened. Whisk into the chicken mixture, then stir in the gnocchi. Bring to a simmer, then season with salt and pepper and top with the scallions.

Cowboy Calzones

Make Pioneer Womans Pizza Dough, then:

Calzone Filling:

1/2 lb breakfast sausage
1 lb ground beef
1/2 diced onion
8 oz can of Rotel (I left it out and we didn’t miss it!, you could do diced tomatoes for less kick)
8 oz whole milk ricotta cheese
1/2 cup grated mozzarella cheese
1/2 cup grated Monterey Jack cheese
1 egg, beaten
Salt and Pepper

1. Preheat oven to 450
In a large skillet brown ground beef, sausage and onion over medium heat. Drain excess grease

2. Add Rotel and cook for 2 mins. remove from heat and let cool slightly.

3. Combine ricotta, mozzarella, monterey jack, and egg in a bowl. Add salt and pepper to taste.

4. Combine cheese mixture with meat mixture.

5. Divide dough into 8 equal balls. Roll into 6 inch circles.

6. Place one-eighth of the mixture in the middle of each circle.

7. Fold one half of the circle over and pinch the edges to seal. Brush with olive oil.

8. Bake for 12 to 15 mins

crockpot cheesy baked potato soup

Ingredients

32 oz. shredded hash brown potatoes
1/2 cup chopped yellow onion
1/2 cup chopped green onion, plus extra for topping
1/4 cup diced celery
1/4 cup diced carrots (optional)
32 oz. chicken broth
1 cup water
1 1/2 tsp. Kosher Salt
1 tsp. ground pepper
3 tbs. all-purpose flour
1 cup Heavy Cream
2 cups shredded sharp cheddar cheese (plus extra for topping)
1/4 cup crisp bacon bits, crumbled
1/4 cup chopped fresh chives
cracked pepper for topping (optional)
sour cream for topping (optional)

Instructions

In a 3-4 quart crock pot add water, broth, onion, green onion, carrot, salt, pepper, and potatoes.
Cook on low setting for 6-8 hours until potatoes are tender.
Add flour to heavy cream and stir until smooth.
Add cream mixture to crock pot and cook on high for 20-30 minutes or until mixture is thickened.
Add cheddar cheese and stir until melted.
Cook on low for 10-15 minutes then turn to “keep warm” setting.
When ready to serve, sprinkle crumbled bacon, fresh chive, optional cracked pepper, and a little green onion over each bowl of soup and serve warm.

2 easy freezer to crockpot meals

Brown Sugar Chicken (Don’t Judge me)

Boneless, Skinless Chicken Breasts, I did 4
1 cup Brown Sugar
1/4 cup Sprite (I will add this once I add everything to the crockpot)
2/3 cup Vinegar
3 cloves smashed and chopped garlic
2 Tablespoon Soy Sauce
1 Teaspoon Black Pepper

Add all ingredients to Gallon Size Freezer Bag, except for the Sprite. When you are ready to cook this, put all ingredients into a crockpot, add the sprite and let cook for 3-4 hours on high.

Honey Garlic Chicken

Boneless, Skinless Chicken Breats, I used 4
3 Garlic Cloves, smashed and chopped
1 Teaspoon Dried Basil (I used Fresh)
1/2 cup Soy Sauce
1/2 cup Ketchup
1/3 cup Honey

Add all ingredients to Gallon Size Freezer Bag. When you are ready to cook this, put all ingredients into a crockpot and let cook for 3-4 hours on high.
