Spanish Pasty
A variation on a Yooper mainstay. It doesn’t sound like much, but I’ve never had someone NOT like this.
6 large potatoes, peeled and thinly sliced
1 medium onion, diced fine
1 1/2 pounds extra lean ground beef
1 can tomato soup
1 TBSP. butter
salt and pepper
Layer ingredients in a large casserole dish in the following order:
ground beef
salt and pepper
onions
potatoes
ground beef
salt and pepper
onions
potatoes
Spread can of tomato soup on top of final potato layer, dot with butter, cover and bake at 350 for one hour. Remove cover and bake 30-45 minutes longer, until potatoes are tender.
