Pork Chop Brown Rice Casserole

I have loved this since I was a kid – yummy, and good for you.

6 lean pork chops
1 cup brown rice
2 medium onions, thinly sliced
1 1/2 cups sliced celery
1 LARGE or 2 medium green peppers, sliced into strips
2 14 oz. cans diced tomatoes
2 TBSP. sugar
1 tsp. salt

Preheat oven to 350. Salt and pepper pork chops; brown on both sides. Place in 9×13 baking dish. Sprinkle with rice. Layer onions, peppers and celery on top of chops. Mix tomatoes with sugar and salt; pour over vegetables. Cover with foil and bake for 1 1/2 hours.
