Buttermilk Pancakes
1 egg
1 cup buttermilk
2 tbsp canola oil
1 cup flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
yield – 10 4inch pancakes
**Note: I usually double the recipe for my family of 5. Throw all the ingredients in a bowl, whisk together and cook on a 350 degree skillet. Flip when they start to bubble. We also love to add frozen fruit (esp. blueberries) or on really special days, chocolate chips! Enjoy
